Red Quinoa Oatmeal

Quinoa is a superfood that you should definitely incorporate into your diet if you haven't already. It is not only rich in protein, but it contains twice as much fiber than any other grain and is packed with iron, magnesium and antioxidants. It's very easy to cook and can easily replace regular white rice. So give it a try! :)

For this recipe I use red quinoa which has a delicious, nutty flavor and just like the other types of quinoa, can be used for salads, baking, breakfast, you name it.

It's also gluten-free and lactose-free, and can be made in under 15 min.


Serves 1

  • 1/2 dl red quinoa

  • 1/2 cup spelt oats

  • 1 1/2 cup lactose-free milk

  • ground cinnamon (to taste)

  • vanilla extract (to taste)

  • Strawberries and chopped almonds

  • (or any topping combination you desire)

  • Raw honey (optional - to taste)


  • Over a low to medium heat, gently heat up the milk.

  • Once the milk is starting to get warm, add the quinoa, cinnamon and vanilla. Also reduce heat just a tad. It takes approximately 8 min for the quinoa to cook, so stir frequently.

  • While quinoa cooks, chop and prepare your toppings, set aside.

  • After the 8 min, add the spelt oats. Stir in and allow oatmeal to simmer for 1 -2 min.

  • Pour oatmeal into a bowl, add toppings and raw honey to taste.

  • Enjoy! :)
