Chocolate-Covered Peanut Butter Banana Bites
This is definitely one of my favorite desserts!
None of my other desserts have been as popular and tagged/commented on Instagram as this one :) I’m so glad that people enjoy it as much as I do!
It’s simple, easy and a much healthier option for those days when you’re really craving a cheat meal but want to stick to your diet.
Ingredients (makes approx. 14 bites)

2 bananas (not too ripe)
organic natural peanut butter
50 -70 gr. 80% dark chocolate
unsweetened coconut flakes
Quick tip: chopped nuts, chia seeds, licorice root powder, etc. also make great toppings!
Method
Prepare a tray lined with parchment paper or foil.
Peel and cut the banana into slices. Put half of the slices on the tray, the other half on the side.
Using a teaspoon or a knife, carefully smear a layer of peanut butter on the slices placed on the tray.
Once all slices have peanut butter on them, top them off with the other banana slices. Set aside.
Prepare a plate with the unsweetened coconut flakes. Set aside, beside the tray.
Melt your chocolate. Either by water bath (bain marie) or microwave whatever suits you best.
Have your tray, plate with coconut flakes and melted chocolate all in close proximity to each other.
Using a fork, spear the banana bites and dip one-by-one into the melted chocolate
Once you’ve covered the sides and bottom, let excess chocolate drip off and carefully place the banana bite back on the tray.
Once all the banana bites have been chocolate-covered. Use a teaspoon to scoop a bit of the melted chocolate and gently cover the top bit that’s missing chocolate and immediately drizzle the coconut flakes on top.
Cover the tray and place in the freezer for 20-30 min before serving.
