Sweet Potato Chocolate Mousse

I am definitely sweet potato crazed at the moment! I just can’t get enough of them! Bear with me here, friends. I promise to move on to another vegetable soon enough. :D

 

As some of you may know, I’m cutting at the moment and that means that I’m on a calorie restricted diet and I have certain macronutrient targets that I have to be hitting in order to achieve my fitness goals. That also means that sometimes I get some insane cravings and I’ve been getting creative in order to satisfy my cravings while trying to stay on track with my diet.

 

It’s a tough balancing act but I’ve been experimenting with the delicious sweet potato purée again and I’ve struck gold! This mousse is a delicious and, thank goodness, low calorie dessert you can enjoy guilt-free. I know I am!! :D

 

Quick tip: The protein powder is optional, you can choose to leave it out without affecting the taste of the mousse, although you might want to add 1 extra tbs. of chia seeds in order to get the right consistency while it chills in the fridge.

 

Ingredients (makes 4-5 servings)

 

  • 2 egg whites

  • 2 tps. Stevia or sukrin gold

  • 1 cup sweet potato purée

  • 3 tbs.raw unsweetened cacao powder

  • 2 scoops chocolate protein powder (optional)

  • 1 tbs. chia seeds

 

Method

 

  • In a medium bowl, beat the egg whites till they are stiff using a hand mixer. Once stiff, add the stevia, mix well again and set aside.

  • In a larger bowl add the sweet potato purée, the cacao powder (and protein powder, if using)  and using a hand mixer, mix till smooth and completely without lumps.

  • Carefully and quickly fold the egg whites and the chia seeds into the purée mix using a spatula. Don’t mix it for too long or too aggressively as you want to keep as much air in the mix as possible to give it a light, fluffy mousse-like texture.

  • Cover the bowl and refrigerate for an hour before serving.

  • Enjoy! :)
