Peanut Butter, Coconut & Cranberry Protein Bars

I love making my own protein bars! They are my go-to snack when I have a busy day since they’re delicious, filling and nutritious.

 

Why is it worth the effort? Well, for one, it’s so much cheaper than buying it at the store or gym. Secondly, you choose and control which ingredients go into them. And lastly, they are easy and quick to make!

 

I like to play around with different berries and oats. Just let you imagination and taste buds go wild when you make your own bars!

 

 

Delicious, filling and easy to make!

 

Ingredients

 

  • 1 cup peanut butter

  • 1/2 coconut milk (any type milk will do)

  • 1 tbs honey

  • 1 1/2 cups protein powder (I used vanilla flavor)

  • 1 1/2 cups uncooked oats (I used spelt)

  • 1/2 unsweetened coconut flakes

  • 1/3 cup dried cranberries

 

Method

 

  • Prepare a small-to-medium sized rectangular cake mold by either lining with baking paper or very lightly grease a little bit of coconut oil.

  • Combine and mix peanut butter, milk and honey in a pot over a low heat.

  • You don’t want to cook it! Just enough heat to make mixture soft.

  • Add the protein powder, mix well.

  • Add the oats, coconut flakes and cranberries, mix well.

  • The mixture should be tough to mix, like a paste or clay that doesn’t smoulder. If it looks dry, add a little more milk until you get the right consistency.

  • Press mixture into the cake mold and flattened out with fingers.

  • Let cool in the fridge for 20-30 min before cutting out your bars.

  • Wrap them up to have them on-the-go and store in fridge.
