15 min. Peanut Butter Protein Cookies

Ever had cravings for cookies one evening but just couldn't be bothered to get dressed and drag yourself to the store? Good news! Now you can whip up a batch of delicious and healthier cookies in 15 minutes with just 4 ingredients!

 

You can almost set a timer to it, they are that easy and that quick to make. These cookies also have the added bonus that they are flourless and sugar-free, so they are definitely a healthier option compared to the sugar-bombs you'd usually find in the supermarket.

 

If you are lactose-intolerant, simply replace the whey protein powder with a vegan/vegetable protein powder option.

 

Just make sure you always have these ingredients in your pantry for those sudden cravings and/or when those unexpected guests drop by. ;-) 

 

 

Ingredients

(makes 14 - 16 cookies)

 

Method

  • Pre-heat the oven to 175 C and prepare a baking tray with lining paper.

  • Put all the ingredients into a medium bowl -except the salt- and use a mixer to mix them all into a slightly crumbly cookie dough.

  • The dough is crumbly due to the lack of flour, but the natural oil from the peanut butter should provide enough moisture to make it possible to form a round, flattened cookie with your palms.

  • Line the cookies up on the tray, use the tines of a fork to gently press the cookies flatter and leave nice straight decorative dents on your cookies. 

  • (optional)  Sprinkle a bit of salt on the cookies before putting them in the oven.

  • Bake the cookies for 10 min till golden brown along the edges.

  • Remove from oven and allow to cool on grill tray or a flat cool surface before serving.
