Tropical Summer Protein Frozen Yoghurt
The weather was great today so I felt inspired to make my own delicious, healthy frozen yoghurt. It was super easy to make! The hardest part was having the patience to wait for the popsicles to freeze!
This recipe is based on Bodylab's Tropical Summer protein powder, it's delicious and I can really recommend it! But you could use whatever protein powder you have at hand or just use a fruit-flavored yoghurt instead. You can personalize this recipe as much as you want! Choose the fruit and add-ons you prefer - I used mango, kiwi and dark chocolate chips. The more colorful, the better they'll look.
If you don't have popsicle molds, don't worry! You can just freeze the entire mix together with the fruit and chocolate chips in the plastic bowl, then scoop it out instead. Either way, it'll be delicious!

300 gr non-fat natural yoghurt (I used skyr)
1 tsp vanilla extract
1/4 cup non-fat milk
50 gr dark chocolate chips (add more if you want more chocolate - who doesn't!)
chopped fruit of your choice (I used mango & kiwi)
Mix the yoghurt, protein powder, powdered sugar, vanilla and milk in a medium bowl until smooth. Then add the chocolate chips.
Chop the fruit into small pieces and (if using popsicle containers/molds) press a few pieces into them, leave some fruit for later.
Fill the popsicle containers/molds with the yoghurt batter 3 quarters of the way, chop the left over fruit into fine pieces and add it to the molds, then top off the molds with the rest of the yoghurt.
Insert the popsicle tops and put the molds in the freezer for at least 2 hours.
Before serving, let the popsicles thaw for a few minutes so you can easily pry them out of their molds.
