Coconut & Coffee Protein Flan
Flan. It doesn't get more Latin than flan! :D If you grew up with a Latin mom then you know what I'm talking about.
As usual I get quite inspired to make healthier alternatives to desserts during my comp prep. I was missing my mom and her amazing flan.. she is literally the flan queen. She is always asked to make her flan for family reunions, birthdays, name days, halloween, pretty much any excuse to eat my mom's flan. It's that good!
Anyway I had a huge bag of unsweetened coconut flakes in the pantry and I had just gotten Bodylab's new protein flavor "caffe latte" delivered and I thought to myself, "I could go for some coconut & coffee protein flan".
So using my mom's traditional flan recipe as a starting point, I set out to make my own protein version of this delicious dessert. She usually makes hers very traditional, without coconut or coffee, so I also had to find a way around that!
I snapped the entire experiment live on my Snapchat: yalonso - and I added a little disclaimer because I had no idea if it was going to work or if the flan would end up tasting good at all. I have pretty large shoes to fill being the daughter of the flan queen, so I was pretty nervous.
I'm so happy and relieved to share that they turned out AMAZING! :-) They came out soft, moist and delicious. They have pretty much the same consistency of a traditional flan, except the coconut flakes add a little more bite and there's more protein in there.
Even my Danish fiancé who doesn't have the same nostalgic relationship to flan really liked it! I hope you guys will enjoy it as well!
(makes 15 - 20 muffin sized mini-flans)
3 scoops Bodylab's Caffe Latte protein powder
200ml extra creamy coconut milk (I used Santa Maria)
125 gr unsweetened coconut flakes
15 - 25 tbsp Bodylab's ZERO Salted Caramel topping
4 tbsp Bodylab's SuperFoods Powdered Sugar
10 -12 drops Bodylab's ZERO Caramel Stevia Drops
1 tsp caramel extract
3 whole eggs
2 egg whites
2 tbsp chia seeds
2 tbsp instant coffee (optional)
Preheat oven to 155 C (311 F) and prepare a deep tray for bain marie (hot water bath)
On a tray line up your muffin molds and put 1 tbsp of Salted Caramel topping plus a pinch of coconut flakes to each mold.
In a large shaker add 3 scoops of the protein powder and 700ml water and shake well
Put the protein shake in a large pot over medium heat, add the powdered sugar, stevia drops, caramel extract and stir well
Add the coconut flakes and coconut milk to the pot and stir well. Lower heat a bit and let mixture come to a gentle boil
In the meantime prepare a bowl with the 3 whole eggs and 2 egg whites, beat them, mix in the chai seeds and set mixture aside
When the protein batter has come to a gentle boil, remove from the heat and wait for it to cool down to room temperature
Optional: If you want a stronger coffee taste, you can add a tbsp of instant coffee to the warm batter. You can also carefully taste the sweetness of the batter and decide whether you want to add more sugar alternative or stevia.
Once the batter is cool, add the egg mixture and mix it well.
Put the deep tray with the water bath in the preheated oven and let the water start to warm up while you fill your muffin molds.
Fill your muffin molds, not all the way to the top though! They will rise in the oven and you don't want them to overflow. So give it about half a centimeter of space to the top of the mold.
Place tray with the mini-flans in the oven and bake for approximately 20 - 25 minutes. Keep a sharp eye on them! Once they start turning a golden brown, you can do the toothpick test and remove from the oven and allow to cool.
Tip: I personally like them slightly warm, but most people like them cold. Traditionally they are served cold, so once they are cooled down to room temperature you could put them in the fridge for 30 minutes to an hour.
You could eat them right out of the mold, or you can serve them in the traditional fashion by unsticking the sides and turning the mini-flan upside down to reveal the delicious caramel top.
Optional: Make a coffee-caramel topping by mixing 1 tsp instant coffee with 4 tbsp of Bodylab's Salted Caramel topping together and pour a little bit over each mini-flan to make them extra moist and tasty,
